Cooking with Jolie runs the only banh mi making class in Hoi An (seriously, nobody else is doing this), plus a market tour class that starts at a grandmother’s farm for herb picking before moving to the local market. The instructors – Hannah, Christine, Blue, Lily, Rosie and others – are consistently funny and knowledgeable, which matters more than you’d think when you’re elbow-deep in pate at 9am.
The full class hits four dishes, and the market portion is worth it just for having someone explain all the weird fruits and vegetables you’ve been too embarrassed to ask about. You’re transported between locations by car, the cooking happens in an actual house rather than a purpose-built tourist kitchen, and you finish by eating everything you made.
The banh mi class specifically covers marinated pork, pate, homemade mayo, and pickled vegetables – the full build, not a shortcut version. If you’re a repeat Hoi An visitor who thinks you’ve done everything, this one probably still has something new for you.
