Tuan does the Vietnamese classics well enough that people who’ve actually been to Vietnam say it feels authentic. The cau lau is the move here – thick noodles, tender meat, broth that tastes like someone’s been working on it all day. Order it if you haven’t tried it before, and order it again if you have.

The staff are warm in a way that doesn’t feel performative. At least one waiter apparently gives impromptu history lessons on pho origins, which is either delightful or a lot depending on your mood.

The menu covers more ground than just noodles – morning glory with garlic, fried eggplant, clams in lemongrass sauce. It’s the kind of place where ordering a few dishes to share makes more sense than going solo on one bowl.
